Tomato koshimbir / salad



Preparation time: 5 to 10 mins
Serves: 2

Ingredients:
  • 4 red tomatoes - finely chopped
  • Coriander leaves - finely chopped
  • Fresh grated coconut - (optional)
  • Green chillies - 2 nos. - lengthwise split into halves
  • Oil - 1 tsp
  • Mustard seeds
  • Asafoetida - 1 pinch
  • Turmeric powder- 1 pinch
  • Sugar - 1 tsp (optional)
  • Salt
  • Diet chiwda / shev - 4tbsp (available in market)

Preparation

  1. In a bowl, mix the finely chopped tomatoes, diet chiwda, fresh grated coconut, and salt. Add sugar if you like a hint of sweetness.
  2. For the tempering or tadka, take 1tsp oil in a small kadai, when the oil heats, add mustard seeds, asafoetida, turmeric powder and green chillies.
  3. Switch off the flame and pour the tempering on to the mixture. Mix well and garnish with coriander.

Note:
Instead of regular tomatoes, use cherry tomatoes for a different look; do not chop them.

You may add 2 tbsp of peanut powder for a different taste.

This is a fantastic tomato salad, which is totally delicious to eat on its own.
