Ingredients:
- 4 red tomatoes - finely chopped
- Coriander leaves - finely chopped
- Fresh grated coconut - (optional)
- Green chillies - 2 nos. - lengthwise split into halves
- Oil - 1 tsp
- Mustard seeds
- Asafoetida - 1 pinch
- Turmeric powder- 1 pinch
- Sugar - 1 tsp (optional)
- Salt
- Diet chiwda / shev - 4tbsp (available in market)
Preparation
- In a bowl, mix the finely chopped tomatoes, diet chiwda, fresh grated coconut, and salt. Add sugar if you like a hint of sweetness.
- For the tempering or tadka, take 1tsp oil in a small kadai, when the oil heats, add mustard seeds, asafoetida, turmeric powder and green chillies.
- Switch off the flame and pour the tempering on to the mixture. Mix well and garnish with coriander.
Note:
Instead of regular tomatoes, use cherry tomatoes for a different look; do not chop them.
You may add 2 tbsp of peanut powder for a different taste.
This is a fantastic tomato salad, which is totally delicious to eat on its own.
